How we tested, for developers
We install the plugin on a real WordPress site, add test content, and compare real page loads with the plugin off and on: the scripts and stylesheets in the page, the comments in the code, the database queries and the size of the page head.
We do this on PHP 8.5 with the newest WordPress and again on PHP 7.4 with WordPress 6.4, and open every screen in a real browser on phone and desktop sizes, in English and Arabic.
For the sitemap figures we filled a test site with one million posts and let the plugin build the complete sitemap.
The same test on eight other SEO plugins
To compare fairly we installed each plugin's current free version from WordPress.org on the same WordPress site, switched it on with its default settings and loaded the same post as a visitor, with every other SEO plugin switched off. We counted what the page had that it did not have with no SEO plugin at all.

A plugin can behave differently once you have been through its setup or switched on more of its features, so treat these as a like-for-like starting point, not a verdict on any one plugin.
What these numbers cannot tell you
They show what the plugin adds on our test server. Your theme, your other plugins and your hosting decide most of your speed, so your own results will differ.
A page that uses one of the SEO blocks gets a few hundred bytes of styling for that block. Pages without a block get nothing.
